Italian Restaurant – Waterloo, London
Overview
We are seeking a highly experienced and commercially minded Restaurant Manager to lead the operations of our premium Italian restaurant located in the Waterloo area. This role requires a confident leader with a proven track record in delivering exceptional service standards, managing high-performing teams, and driving operational excellence.
The successful candidate will have a minimum of 5 years’ experience in restaurant management, strong systems knowledge (including Toast POS), and a deep understanding of high-end hospitality standards.
This is a full-time, permanent position, requiring full flexibility.
Key Responsibilities
Lead and oversee all front-of-house and operational activities, ensuring seamless day-to-day service
Set, maintain, and continuously improve high-end service standards across the restaurant
Recruit all necessary staff for the restaurant, including workforce planning, interviewing, and onboarding
Train, develop, and retain staff, with a strong focus on upselling techniques, product knowledge, and revenue generation
Ensure the team delivers confident, consistent upselling while maintaining a premium guest experience
Plan, coordinate, and manage private events, group bookings, and special functions, ensuring smooth execution from enquiry to delivery
Design and manage staff rotas in line with business needs and labour cost targets
Conduct regular performance reviews and implement training and development plans
Manage ordering, supplier relationships, stock control, and inventory audits
Ensure accurate use of the Toast POS system, including reporting, cash control, and compliance
Monitor KPIs, sales performance, and operational costs, implementing strategies to maximise profitability
Handle customer feedback and complaints with discretion and professionalism
Ensure full compliance with UK health & safety, food hygiene, licensing, and employment regulations
Work closely with the kitchen management team to ensure quality, consistency, and efficient service delivery
Maintain a strong floor presence during service, leading by example
Requirements
Minimum 5 years’ experience as a Restaurant Manager or General Manager in a quality or high-end restaurant
Proven experience in recruiting, training, and leading hospitality teams
Demonstrated success in training staff on upselling and increasing average spend per cover
Experience in planning and managing restaurant events and group bookings
Strong operational, financial, and organisational skills
Excellent knowledge of service standards, food safety, and compliance requirements
Hands-on experience with Toast POS (essential)
Experience with stock management, ordering systems, and supplier negotiation
Ability to analyse reports and make data-driven decisions
Strong leadership and people-management skills with a coaching mindset
Excellent communication, organisational, and problem-solving abilities
Fully flexible availability, including evenings, weekends, and public holidays

Salary & Benefits
Salary: £42,000 – £50,000 per annum, depending on experience and qualifications
